Authentic Sour Beef And Dumplings

Prep: 10 minutes plus marinating
Cook: 6 hours
Yield: 12 servings

1-1/2 cups water, divided
1-1/4 cups cider vinegar, divided
2 large onions, sliced, divided
1 medium lemon, sliced
15 whole cloves, divided
6 bay leaves, divided
6 whole peppercorns
2 tablespoons sugar
2 teaspoons salt
1 beef sirloin tip roast (3 pounds), cut in half
1/4 teaspoon pepper
12 gingersnap cookies, crumbled
DUMPLINGS:
3 pounds russet potatoes
2 eggs
1 cup all-purpose flour, divided
1/2 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon ground nutmeg
Dash pepper


In a large plastic bag or bowl, combine 1 cup water, 1 cup vinegar, half of the onions, lemon, 10 cloves, four bay leaves, peppercorns, sugar and salt; mix well. Add roast. Seal bag and turn to coat; refrigerate overnight, turning occasionally.

Drain and discard marinade. Place roast in a slow cooker; add pepper and remaining ingredients except gingersnaps. Cover and cook on low for 6-8 hours or until meat is tender.

Remove roast and keep warm. Discard bay leaves. Stir in gingersnaps. Cover and cook on high for 10-15 minutes or until gravy is thickened.

Two to three hours before roast is finished, boil potatoes whole until tender. Drain well. Refrigerate for 2 hours.

Peel and grate potatoes. In a bowl, combine the eggs, 3/4 cup flour, bread crumbs, salt, nutmeg and pepper. Add potatoes; mix with hands until well blended. Shape into 1-1/2-in. balls; roll in remaining flour.

In a large kettle, bring salted water to a boil. Add the dumplings, a few at a time, to boiling water. Simmer, uncovered, until the dumplings rise to the top; cook 2 minutes longer. Remove dumplings with a slotted spoon to a serving bowl. Serve with roast and gravy.

Tips and Tricks
If your roast is large, make sure to cut it in half for even cooking. I skipped the bay leaves for the second half of the recipe. You could also use various types of vinegar if you don't have cider vinegar. I strained the onions and other ingredients out of the gravy, but you could leave them in if you prefer. Be sure to not overboil your potatoes. Russets work best, other varieties of potatoes don't have the starch content needed for dumplings, and overcooked potatoes will not form balls. The refrigeration step is crucial, I also refrigerated my grated potatoes for about 30 minutes to make sure they were dry enough. Mix only until combined, overkneading will negatively affect the quality of the dumplings. If the pot is not large enough, you may need to cook them in two batches.

Trim fat from roast. Omit salt.

Marinated Broiled Scallops

Prep: 10 minutes plus marinating
Cook: 5-6 minutes
Yield: 4 servings

2 1/2 pounds sea scallops
1 teaspoon lemon pepper
5 tablespoons olive oil
3 tablespoons chopped fresh (or 1 1/2 tablespoons dried) rosemary
1/8 teaspoon dried red pepper flakes
In a bowl, place the scallops and sprinkle with pepper.
In another bowl, mix remaining ingredients. Pour mixture over scallops and toss. Cover and marinate at room temperature for one hour.
Heat broiler and place scallops on broiling pan. Broil for 2-3 minutes, turn and broil for another 2-3 minutes. Do not overcook. Serve hot.
Tips and Tricks
The scallops can be marinated overnight in the refrigerator. Remove and allow to stand at room temperature for 20 minutes before cooking. They can also be skewered and cooked on the grill.
How Kids Can Help
Mix marinade ingredients. Pour over scallops. Older kids can thread scallops on skewers.

Codfish Cakes

Prep: 20 minutes
Cook: 3-5 minutes per batch
Yield: 12-16 cakes

1 pound salt cod, soaked in water overnight
3 potatoes, boiled and well drained
2 tablespoons chopped parsley
1/2 cup grated onion
freshly ground pepper to taste
1 egg yolk
vegetable oil for deep frying

Remove cod from water and cook in boiling water for 5 minutes. Remove and drain thoroughly. Shred cod, removing any bones, and place in a large bowl.
In another bowl, coarsely mash the well-drained potatoes. Mix into shredded cod thoroughly but gently. Add the parsley, onion, pepper and egg yolk and mix well. The mixture should be fairly dry.
Scoop up a quantity of mixture the size of an egg and form into compact oval shapes. In a deep saucepan, add enough oil to come halfway up pan. Heat until hot and fry cod cakes a few at a time until dark golden in color, about 3-5 minutes. Serve hot.
Tips and Tricks
The secret to success is the dryness of the mixture. Cakes that are too moist may fall apart during frying. Coddies are traditionally served with saltine crackers and mustard.
Make It Healthier
Pan fry the cakes in a small amount of oil instead of in a deep pan. Drain well.

Spicy Shrimp

Prep/Total Time: 15 minutes
Yield: 4 servings
1 cup chili sauce
1 teaspoon horseradish
2 teaspoon Old Bay seasoning, divided
2-3 dashes hot sauce
1 teaspoon lemon juice
1/2 cup white vinegar
1/2 cup water
1 pound shrimp, unpeeled

To make sauce, combine chili sauce, horseradish, 1 teaspoon Old Bay, hot sauce, and lemon juice in a bowl and refrigerate.
In a saucepan, combine water, viegar and remaining Old Bay and bring to a boil. Reduce heat, add shrimp and simmer covered for 7-10 minutes. Remove shrimp and serve with sauce.
Tips and Tricks
If you don't have chili sauce, substitute ketchup and alter the seasonings to suit your taste.

Old Bay is very salty. Use it sparingly.

Baked Crab Imperial

Prep: 10 minutes
Bake: 15-20 minutes
Yield: 4 servings

1 pound lump crabmeat, picked through for cartilage
1 egg, beaten
1 teaspoon Worchestershire sauce
1 small onion, minced
1 green pepper, minced
1 celery stalk, finely diced
1 tablespoon chopped parsley
1/2 teaspoon dry mustard
1 tablespoon mayonnaise

In a bowl, combine all ingredients together. Place in a shallow casserole dish and bake at 350 for 15-20 minutes.

Tips and Tricks
In place of fresh parsley, use 1 teaspoon dried parsley.
Make It Healthier
Use reduced-fat mayo.

Older kids can help pick through the crabmeat. Mix ingredients.

Coconut Shrimp

These crispy-coated shrimp require some extra prep time, but they're worth it!

Prep: 1 1/4 hours + marinating
Cook: 15 minutes
Yield: 5 servings

1 can (14 ounces) light coconut milk, divided
1 jalapeno pepper, seeded and chopped
1/4 cup minced fresh cilantro
1-1/4 pounds uncooked medium shrimp
3/4 cup all-purpose flour
4 egg whites
3/4 cup panko (Japanese) bread crumbs
3/4 cup flaked coconut, lightly toasted
1/3 cup reduced-sugar apricot preserves
1 teaspoon spicy brown mustard

Place 2 tablespoons coconut milk in a small bowl; cover and refrigerate. In a large resealable plastic bag, combine the jalapeno, cilantro and remaining coconut milk. Peel and devein shrimp, leaving tails on. Add to bag; seal and turn to coat. Refrigerate for 1 hour.

Place flour in a shallow bowl. In another bowl, lightly beat the egg whites. In a third bowl, combine bread crumbs and coconut. Drain and discard marinade. Dip shrimp in flour and egg whites, then roll in crumb mixture.

Place on a baking sheet coated with cooking spray. Bake at 400° for 7-9 minutes on each side or until lightly browned. Meanwhile, for dipping sauce, add preserves and mustard to the reserved coconut milk. Serve with shrimp.

Tips and Tricks
Coconut milk should be in the international section of your grocery store. If you can't find it, use regular milk. Be sure to wear gloves when chopping peppers. Fresh cilantro is best, but if you don't have it, substitute 1TBSP dried cilantro.
Make It Healthier
This recipe already uses egg whites. Shrimp are high in cholesterol, but are also a great source of Omega-3 fatty acids. Enjoy in moderation!

Measure ingredients. Turn bag to coat. Older kids can coat the shrimp in crumb mixture. Mix dipping sauce.

Maryland Crab Soup

Prep: 5 minutes
Cook: 15 minutes
Yield: 10 servings

1 can (28 ounces) whole tomatoes, cut into small pieces
3 cups water
2 cups beef broth
1 cup frozen lima beans
1 cup frozen baby carrots or sliced carrots
1 cup frozen yellow sweet corn
2 tablespoons chopped onions
1 tablespoon OLD BAY Seasoning
1 pound lump crabmeat

Place all ingredients, except crabmeat, in 4-quart saucepan.

Bring to boil on medium heat. Reduce heat to low; cover and simmer 5 minutes.

Add crabmeat; cover and simmer 10 minutes.

Tips and Tricks

Be sure to pick through the crabmeat to remove cartilage before adding to the soup. I prefer to use real crab meat when making soup, but some people prefer to substitute imitation crabmeat. The recipe is more authentic with real crabmeat. Buy diced canned tomatoes to save time. If you don't have Old Bay, substitute any other seafood seasoning. Buy frozen soup vegetables to save time. This is a great way to hide vegetables from kids if you chop them finely.
Make It Healthier
Use low-sodium broth and no-salt-added canned tomatoes. Use less Old Bay. Make the soup heartier by increasing the amount of vegetables.

Measure ingredients and pour into pot. Older kids can stir.

Baltimore's Best Crab Cakes

Think you've had good crab cakes? Try this recipe, a classic from Baltimore!

Prep: 15 minutes + chilling
Cook: 15 minutes
Yield: 6 crab cakes

1 egg, beaten
4 tablespoons mayonnaise
1/3 cup plain breadcrumbs
1 tablespoon minced fresh parsley
1 teaspoon Old Bay seasoning
2 teaspoons Worcestershire sauce
1 teaspoon prepared mustard
salt and pepper to taste
1 pound lump crabmeat, cartilage removed
breadcrumbs for coating crab cakes

In a bowl, combine beaten egg, mayonnaise, bread crumbs, parsley, Old Bay, Worcestershire sauce, mustard, salt and pepper and mix well. Pour mixture over crabmeat and toss gently but thoroughly.

Form into 6 crab cakes and coat with breadcrumbs. Refrigerate 15 minutes.

Place on a baking sheet and bake at 425 for 8 minutes on each side, or until golden brown.

Tips and Tricks
If using dried parsley, use 1 teaspoon. The crab cakes can be made ahead of time and refrigerated until baking. Light mayonnaise is OK to use, but do not use fat-free mayonnaise, as the texture is not thick enough to hold the cakes together. Crab cakes can also be broiled for 5 minutes on each side, or fried in oil.
Make It Healthier
Omit the salt. Use less Old Bay. Use whole wheat bread crumbs, Bake or broil crab cakes instead of frying.
