Mexican Seasoning Mix

Yield: approximately 15 tablespoons
(3 tablespoons is equivalent to one seasoning packet)

1/4 cup all-purpose flour (I like to use white whole wheat or whole wheat pastry flour)
2 T chili powder
1/4 cup onion powder
2 tsp garlic powder
4 tsp salt
4 tsp paprika
1/2 tsp cayenne pepper
2 tsp sugar
2 tsp cumin
2 tsp oregano

Put all of the ingredients in a blender. Cover and blend until powdery for 5 seconds or less (don't over blend). Use the "pulse" feature if your blender has one. Add more cayenne powder if you prefer it hotter.

Store in an airtight container for up to six months.

Tips & Tricks:
The mixture works well even if you skip the blender/pulse step.

Herbal Salt Substitute

1 tbsp dried basil
1 tbsp dried thyme
1 tbsp ground coriander
2 tsps onion powder
2 tsp dried parsley flakes
2 tsp ground cumin
1 tsp garlic powder
1 tsp ground mustard
1 tsp cayenne pepper
1 tsp paprika

In a small bowl, combine all ingredients. Store in an airtight container in a cool dry place for up to one year.

Tips and Tricks
Use this mix in place of salt to lower sodium content. Great for diabetics or anyone on a low salt diet!
