Skillet Macaroni Dinner

Prep: 40 Minutes
Yield: 6 Servings

1 1/2 lbs ground beef
1 medium onion, chopped
1 29 oz can tomatoes
12 oz Whole kernel corn
1 cup macaroni
1 Tbs Chili Powder
2 1/2 tsp garlic salt
1 cup shredded cheese

In large skillet brown hamburger & onion. Add tomatoes, corn and macaroni and cook, covered 30 minutes or until macaroni is tender, stirring occasionally. Stir in chili & garlic salt. Sprinkle with cheese & heat, covered, 5 minutes.

Tips & Tricks
Use a nonstick skillet for easier clean up. I reduce the amount of beef to save money and increase veggies, using whatever happens to be in the fridge...half a jar of leftover green beans etc can be just added when you add the corn. If using fresh tomatoes, peel them by blanching in hot water, chop & add with a slight amount of water.

How Kids Can Help:
Kids can dump in ingredients, older kids can shred cheese.

Make it Healthier:
Use fresh garlic instead of garlic salt. Use low sodium tomatoes & corn. Use extra lean ground beef, or substitute lean turkey for all or part of the beef. Replace part of the ground meat with bulgur wheat to add fiber & whole grains.
