Spinach Souffle'

Prep: 50 minutes, including baking
Yield: 4-6 servings

1 10 oz pkg frozen chopped spinach, thawed & drained
1 egg lightly beaten
2 tbs minced onions
1/2 cup herbed seasoning stuffing mix
1 can cream of mushroom soup
1/4 cup melted butter
1/2 cup parmesean cheese

Mix all together except cheese in a bowl, pour into 1 1/2 quart baking dish. Top with cheese and bake for 45 minutes at 350 degrees.

Make it Healthier:
Butter can be reduced to 2 tbs with good results.
