Watermelon Ice

Prep/Total Time: 15 minutes + freezing
Yield: 6 servings

6 cups watermelon, seeds and rind removed and coarsely chopped
1 tablespoon lemon juice

In a blender, puree watermelon and lemon juice, adding watermelon pieces in batches if necessary. Pour into a square baking dish and smooth the top.

Cover and freeze for at least 3 hours. Use an ice cream scoop to serve.

Tips and Tricks
Buy seedless watermelon to eliminate removing the seeds. A glass baking pan works better than metal.

This recipe contains no additional sugar or salt. It doesn't get any healthier!

Add watermelon to blender. Push buttons on blender. Smooth top on mixture in baking pan.
