Peach Cobbler

Yield: 8 servings
Prep: 35 minutes including baking

Filling:

4 cups peeled & sliced fresh peaches
3/4 cup brown sugar
1 tsp cinnamon
1 tsp vanilla
1 tbs flour

Crust:

1 cup flour
1 tsp baking powder
1/2 tsp baking soda
3 tbs brown sugar
4 tbs sweet cream butter, cut into pieces
2/3 cup buttermilk

1 tbs brown sugar, for topping

Preheat oven to 425 degrees. In a bowl combine filling ingredients & mix well. Pour into 1 1/2 quart greased baking dish. Bake for 10 minutes.

While the fruit is baking, combine dry ingredients for crust in a bowl. Cut in the butter to make coarse crumbs. Add buttermilk & stir to form a gooey dough.

Remove peaches from oven & drop rounded spoonfuls of dough on top. Sprinkle with remaining 1 tbs brown sugar and return to the oven for 20 minutes. Top will be golden brown. Serve warm with vanilla ice cream.

Tips & Tricks:
To quickly peel peaches, blanch for 30 seconds in boiling water, then put into cold water. Skins will slip off.

To save washing another bowl, mix peaches & filling ingredients directly in baking dish.

How Kids Can Help:
Kids can help peel peaches. Kids can pour measured ingredients into the bowl.

Oh yay! Love this recipe, Jen. Thanks for sharing. Peaches are one of my favorite foods. Must try that skinning method for sure.
