Skillet Sausage and Rosemary Potatoes

Prep: 20 minutes
Yield: 6 servings

1 tbs extra virgin olive oil
3 cups diced red potatoes
1 small onion, diced
1 lb pork sausage
1/2 tsp dried rosemary
1/2 tsp rubbed sage
2 tbs chopped parsley (fresh)
salt & pepper to taste

Heat oil in a large skillet over medium high heat. Add potatoes and cook until slightly brown, about 7 minutes, stirring occasionally. Add onion, cook until tender. Add crumbled sausage; cook until browned. Add spices, salt & pepper, cook and stir until well blended.

Suggested Sides:
Fresh fruit & cottage cheese.
