Broiled Corn on the Cob

Tonight we grilled steaks with corn on the cob. Since my pot for blanching corn was in the dishwasher I decided to try something new-broiled corn. I haven't gotten up my nerve to grill it yet, but broiling worked really well!

On a broiler pan lightly spritz the whole (hulled) cobs of new corn with olive oil.

Sprinkle with salt, pepper & seasonings. I used salt, pepper, and a dash of chili powder. Mrs. Dash would be delicious, but I didn't have any on hand.

Put under your broiler 5-8 minutes on each side, or until kernels darken slightly and plump out. When the corn is slightly browning on the very tips it is done. Turn once during cooking.


Tips & Tricks:
Next time I make this, I will use butter instead of olive oil, because I prefer the butter flavor on corn.

Make it Healthier:
*sigh* Don't use oil or butter. Omit salt.

How Kids can Help:
Kids can help hull the corn cobs and pick off the corn silk.

I've found the butter in the broiler smokes and almost makes fire...watch out! Off to broil some corn with your recipe and make elotes for dinner!

I use healthy virgin coconut oil for broiling, frying and baking. It makes a perfect substitute for butter and shortening.

From a health standpoint, coconut oil is the best choice here because it is a healthy saturated fat containing medium-chain lauric acid and because it oxidizes less at high temperatures than other oils. Butter isn't a great choice because it contains bad animal saturated fat, but butter is tasty and also won't oxidize too much. Olive oil, while generally very healthy if used at low temperatures, would probably oxidize, creating free-radicals, at broiling temperature. For health, organic extra virgin coconut oil is the best choice. For taste, organic butter is the best choice.
